1 sachet de sucre vanillé (ou pas)
7 œufs
Eau de fleur d’oranger (ou zeste d’un citron, ou rien)Fouettez les jaunes d’œufs avec le sucre jusqu’à ce que la préparation double de volume. Incorporez la farine et la fécule tamisée

(c’est important pour que le gâteau soit bien aérien) puis quelques gouttes d’eau de fleur d’oranger ou le zeste finement râpé d’un citron.
Montez les blancs d’œufs en neige ferme sans les casser puis incorporez délicatement les deux préparations à l’aide d’une maryse.
Versez-la dans un moule à manqué bien beurré et légèrement fariné et enfournez 50 à 60 minutes dans un four préchauffé à 150°C.
Laissez refroidir avant de démouler. Dégustez à toute heure avec de la confiture, du chocolat ou nature.
