INGRÉDIENTS
Pour une douzaine de crêpes :
250 g de farine de riz
10 cl d’eau
25 cl de lait de coco
1 œuf
1 c.à.s d’extrait de pandan / ou colorant vert
Pour le montage :
5 petits pots de confiture de Framboises Épépinées Bonne Maman
100 g de sucre de canne
200 g de noix de coco râpée
10 cl d’eau
PRÉPARATION
ÉTAPE 1
Mélangez l’eau, le lait de coco, la farine, l’œuf et l’extrait de pandan. (Si la pâte est trop épaisse, ajoutez de l’eau). Faites chauffer une poêle graissée sur feu moyen et versez une petite louche de pâte. Faites cuire les crêpes quelques minutes, en les retournant à mi-cuisson. Elles doivent être fines et ne doivent pas trop dorer.
ÉTAPE 2
Dans une poêle, faites fondre le sucre et l’eau, puis ajouter la noix de coco râpée et mélangez jusqu’à évaporation de l’eau. Réservez.
ÉTAPE 3
Montage : déposez un peu de mélange à la noix de coco sur chaque crêpe, ajoutez la confiture puis roulez comme des rouleaux de printemps. Servez.
